Newlywed Recipe- Banana Oatmeal Muffins

Healthy Banana Oatmeal Muffins

1/2 Cup 1% Milk

2 1/2 Cup Oats

6 oz Greek Yogurt

2 Eggs

1/3 Cups Brown Sugar

1 1/2 tsp Baking Powder

1/2 tsp Baking Soda

2 Ripe Bananas

(That is right folks- there is no flour!)

1) Put all ingredients into blender or food processor. Blend until it becomes a smooth batter.

2) Spray cooking pan with non stick cooking spray (or use foil cupcake cups-paper cups do not work well). Then, pour batter into pan.

3) Bake at 400 for 20-25 minutes until toothpick comes out clean. Next, enjoy!

The muffins do have a bit different kind of consistency than those made with flour. However, they are still great and even pretty healthy!

This recipe is good by itself, but it is a good base for any type of muffins! Next time I plan on trying a few other kinds: Adding mashed bananas (in addition to the ones blended) and nuts to make a banana nut muffin, apples and cinnamon and blueberry! Can’t wait to try them!
